Broccoli Walnut Crunch Salad

This recipe was inspired by the broccoli salad that they serve in delis at grocery stores. You know what I’m talking about. It’s full of mayo and raisins and magic. This is a slightly healthier version of that salad, but it still tastes amazing.

This salad could stand alone as a lunch, maybe topped with a fried egg. It also makes a great side for any meal. And since broccoli is a tougher vegetable, you can prep this salad and eat off it all week! Meal prep-ability in recipes is always a plus, in my humble opinion.

Ingredients

  • 2 cups broccoli florets roughly chopped
  • 1/3 cup walnuts roasted, salted
  • 1/4 cup red onions finely chopped
  • 2 tbsp dried cranberries
  • 1/4 cup shredded cheese
  • 2 tbsp mayo
  • 1 tsp dijon mustard
  • salt & pepper to taste

Instructions

  1. Steam broccoli for about 4 minutes so that it is tender, but still firm.

  2. Mix all ingredients together in a large bowl.

  3. Chill for at least 30 minutes, then serve!
