Zesty Bean Dip

It’s Super Bowl Sunday! This game means nothing to me, but I am very into the gameday eats. And commercials. And I can’t wait to see JT at halftime!

Grant and I went to Rouses this morning and got our groceries for the game and the week. It was a madhouse. I guess everyone is as into the food as we are. We got chips – Beanitos for me and VooDoo Zapp‘s for him (I’m lying I ate so many Zapp’s). If you’re not from Louisiana you probably have no idea what I’m talking about, but if you ever get the opportunity to eat VooDoo flavored Zapp’s chips, do not pass it up!!

We also got the goods for coleslaw, a honey mustard sauce, and all the burger fixings. We still have a ton of deer meat from our relatives who just seem to love giving us more deer meat. So of course we had deer burgers. Yum.

But back to those chips. I think chips and dip might be one of my favorite things to eat. The crunch is just so satisfying. And I love combining flavors and textures. And I just love guac and queso. So here is a recipe for a simple, but Super Bowl worthy bean dip. It’s smooth and flavorful, but not filled with lard and saturated fat. Dip away! I bet JT would love it…

Zesty Bean Dip

Ingredients

  • 1 can pinto beans
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • pepper to taste

Instructions

  1. Drain and rinse pinto beans.

  2. Add all ingredients into a blender or food processor. Blend until smooth, about 1 minute.  

  3. Serve with sliced vegetables and chips!
