Well I totally outdid myself with this one! I whipped up these nachos with ingredients I had at home and they turned out so good! Like when I took the first bite I was like, damn I’m good.

Last weekend Grant and I went to the LSU game in the superdome in New Orleans. We had a great time. But really the real MVP of the night were the nachos we got in the dome. I sweet talked the guy at the booth to give us half chicken, half pulled pork (because I couldn’t decide) and top our nachos with coleslaw. YUM. But I was in a total food coma the rest of the game. Like, move aside alcohol, I’m drunk on nachos.

Anyways, I wanted to make a healthier version this week and these turned out so delicious! I even did a quick nutrition analysis and they clocked in at only 360 calories and really balanced macros (see below). These guys just might be my new go to dinner!

I used my favorite chips, Beanitos, which are higher in protein & fiber, and lower in fat than any other chips out there. And they’re completely vegan and gluten free. And okay, some Tostitos scoops found their way in their too, but I don’t like to waste food and they were leftover from a beach trip! I also really recommend Stubbs BBQ Sauce. This brand has the lowest amount of sugar than any other sauces on the market. Some are crazy high in sugar – I’m looking at you Sweet Baby Rays!

Healthified Gameday Nachos

Hearty and satisfying nachos!

Ingredients

  • 1 handful Chips, Beanitos
  • 3 tbsp Bell Pepper Chopped
  • 2 tbsp Onion Chopped
  • 3/4 cup Chicken Breast Chopped
  • 1/4 cup BBQ sauce, Stubbs
  • 1/4 cup salsa
  • 1/2 tsp cumin ground
  • 1/2 tsp chili powder
  • 1/2 cup shredded cheese
  • 1/2 avocado cubed
  • 3 tbsp plain greek yogurt

Instructions

  1. Place chips in an even layer on a plate

  2. Sprinkle bell peppers and onions over chips

  3. In a separate bowl, combine chicken, salsa, BBQ sauce, cumin, and chili powder. Heat in the microwave about 1 minute or on the stovetop until hot. Once heated, add chicken mixture on top of chips.

  4. Next, add cheese on top of chicken. Melt cheese in the microwave or toasted oven for about 1-1 1/2 minutes. 

  5. Top with cubed avocado and greek yogurt. Serve immediately!
