I have to be honest here, y’all. I made this recipe and took these pictures like a year and a half ago.
I just never got around to posting this recipe becauseĀ I suck at blogging. But that doesn’t make these little macaroons any less delicious!
Seriously, this pan is unrecognizable from the picture above. Like, that pretty, matte color is 100% gone. It’s all black and nasty now. And that is the one and only baking sheet my roommate and I use. And we use it almost nightly. We really need a new baking sheet.
But I can’t believe I actually wrote this recipe down, complete with instructions, and even took pictures of these cute little guys!
It’s a blogging miracle, and now I just want to go make them again. These mounds of goodness are super low carb and contain no sugar. Basically they are the perfect bedtime or after dinner snack when you’re craving something sweet.
Do yourself a favor and add these to your meal prep Sunday list. Heck, you can make these any night of the week and it would only take about 30 minutes max. This recipe is only 4 ingredients. Dessert don’t get much easier than that!
Coconut Almond Macaroons
Simple, no sugar, almond coconut macaroon recipe
Ingredients
- 1 cup Dessicated Coconut
- 20 drops Vanilla Stevia
- 1/4 cup Almond Butter
- 1/2 tsp Vanilla Extract
Instructions

Mix together all ingredients.

Using a tablespooon, pack the mixture into the spoon and place on baking sheet to form the macaroon.

Place in the freezer for about 10 minutes, until hardened

Store in an airtight container in the fridge
