Many of my favorite meals are born out of random ingredients I have in my fridge. I love the challenge of making a delicious meal with those odds and ends that you don’t want to waste. That’s exactly how this recipe was born!

You can absolutely recreate this with your favorite sausage and whatever veggies you have on hand. I’ve substituted butternut squash for the sweet potatoes and it came out great. It would also be great over quinoa, topped with fresh herbs, as a soup, or with a dollop of greek yogurt. The options are endless!

Since I’m all about balance, you know I’ve got you covered with each of the macros here. We’ve got protein from the sausage, fat also from the sausage and olive oil, and fiber-filled carbs from the sweet potatoes and other veggies.

And I’d be remiss not to remind you that carbs are not evil and they do not make you gain weight…unless you eat too many of them. But that goes for all food and all macros. Easy Sweet Potato & Sausage Skillet

Ingredients

  • 1 tbsp olive oil
  • 1 cup sweet potatoes cubed
  • 10 cherry tomatoes
  • 2-3 links spicy sausage removed from casing
  • ½ cup green onion chopped
  • 1 cup cauliflower florets chopped
  • Salt & pepper to taste
  • Italian Seasoning to taste

Instructions

  1. Add olive oil, sweet potatoes and tomatoes to a skillet over medium heat, and cook until sweet potatoes are tender and tomatoes burst, about 10 minutes.

  2. Add sausage and onions to the skillet, and cook until sausage is browned, about 5 minutes.
  3. Add cauliflower, salt, pepper, and Italian seasoning. Cook until cauliflower is tender, about 5-10 more minutes.
