Easy Sweet Potato & Sausage Skillet

Easy Sweet Potato & Sausage Skillet

If you are looking for an easy weeknight meal that cozy and savory, and also happens to make great leftovers, look no further! This Easy Sweet Potato & Sausage Skillet is the easy and delicious dinner you need in your life.

Many of my favorite meals are born out of random ingredients I have in my fridge. I love the challenge of making a delicious meal with those odds and ends that you don’t want to waste. That’s exactly how this recipe was born!

You can absolutely recreate this with your favorite sausage and whatever veggies you have on hand. I’ve substituted butternut squash for the sweet potatoes and it came out great. It would also be great over quinoa, topped with fresh herbs, as a soup, or with a dollop of greek yogurt. The options are endless!

Balanced Meal Breakdown

Since I’m all about balance, you know I’ve got you covered with each of the macros here. We’ve got protein from the sausage, fat also from the sausage and olive oil, and fiber-filled carbs from the sweet potatoes and other veggies.

And I’d be remiss not to remind you that carbs are not evil and they do not make you gain weight…unless you eat too many of them. But that goes for all food and all macros. Eating the right kinds of carbs, like the ones found in this Easy Sweet Potato & Sausage Skillet, in the right amounts is what really matters!

These Herby Turkey Burgers are another favorite balanced dinner. And you really can’t go wrong with these Spicy Sriracha Lettuce Cups.
