Sweet Summer Quinoa Salad

The end of summer is upon us…how are we feeling about this? I personally enjoy the summer, but things really feel like they’re dragging on by the time August rolls around. It’s just so hot and humid, everyone just seems stressed and annoyed most of the time. Usually, it’s that “back to school, gotta get organized” energy. I don’t even know what’s going on this year. So, we distract ourselves with this Sweet Summer Quinoa Salad!

One thing we’ve got going for us is plenty of delicious summer produce. I got a box from Covey Rise Farm for the first time last week and man am I enjoying it! They say it keeps you creative in the kitchen, and I am definitely feeling that. I don’t normally get Delica squash or eggplant, so those will be fun to experiment with. 

I guess this Sweet Summer Quinoa Salad isn’t THAT creative. But it is really freaking good, so just let me enjoy my seasonal salad in peace. We’re utilizing crisp cucumbers, sweet tomatoes, and juicy peaches from my box, and let me just tell you, fresh and local produce just tastes better! I highly recommend picking up a box of local produce, wherever you are, if you are able to!

Now, onto the recipe. This recipe is really so versatile, you can swap out the nectarine for any stone fruit, like peaches or plums. The tomatoes and cucumbers could be replaced with celery or bell peppers. Feta is great here, but if you want more of a punch, gorgonzola is awesome, and goat cheese is a tangy and creamy alternative. Any nuts will work here, as will any herbs! Serve this with chicken or shrimp as an entree, or replace the cheese with avocado for a vegan option. I added some chicken and avocado in the pictures, and it was a perfectly satisfying dinner!

Sweet Summer Quinoa Salad

A sweet, flavorful quinoa salad that is as versatile as it is delicous!

Ingredients

  • 2 tbsp olive oil
  • Juice + zest of 1 lemon
  • 1 tsp dijon or whole grain mustard
  • 1 garlic clove minced
  • 1 ½ cups quinoa cooked
  • ½ cup tomato (about half a large) chopped
  • ½ cup cucumber chopped
  • 1 small peach chopped
  • ¼ cup feta
  • ¼ cup walnuts chopped
  • 2 tbsp parsley chopped
  • 2 tbsp cilantro chopped
  • Salt & pepper to taste

Instructions

  1. Mix all ingredients in a large bowl.

  2. Store in an airtight container in the fridge.
